How to make delicious candy apple chips. A wonderful by-product of this recipe is the leftover syrup that is flavoured like candy apples.

Billionaire “turtle candy”:



Slice two medium apples or three small ones very thinly. I had better results slicing them very thin and keeping them small.
Place one cup of granulated sugar (225g) and one cup of water (250ml) in a medium saucepan. Add 1/4 tsp (about 1ml) of ground cinnamon and a few drops of red food colour (optional).
Bring this mixture to a boil over med/high heat, stirring continuously. Once it comes to a boil, add the apples and continue to boil for 15 minutes. Stir apples gently a couple of times. Cook until apples are translucent.
Remove apple slices, one at a time with a pair of tongs and place them in a single layer on a rack. The rack should be placed on a cookie sheet covered with parchment paper or a silicone mat.
Bake at 350 F (176C) for 15 minutes. Remove slices from rack and place on parchment paper to cool and harden. Do this while they are still hot otherwise they may stick to the rack.

Leftover syrup:
You can use this “as is” for ice cream, I boiled mine for another 5 minutes to thicken it up a bit.
